Norwegian Salmon

Ingredients

600g skinned and boneless Norwegian salmon fillet
1 small Panini type loaf of bread (halved lengthways)
4 small onions (halved)
1 aubergine thinly sliced
1 courgette thinly sliced
2 peppers (capsicums)
200ml olive oil
30ml balsamic vinegar
½ lemon sliced into thin wedges
fresh oregano
fresh basil
salt & pepper

Method

Cut the salmon into strips.
Pour olive oil over the salmon and vegetables and sprinkle with the fresh oregano.
Let stand one hour.
Drain off the oil and shallow-fry the salmon and vegetables for 5 minutes or put them on the grill.
Add the balsamic vinegar, salt and pepper.
Toast the halves of bread.
Serve the salmon and vegetables on the bread and garnish with the fresh basil and lemon wedges.
